And, of course, I'm hosting the kids and their kids for a event here at Nana's house. I'm hosting a little earlier so we won't be having the traditional ham, leg of lamb, turkey or Scrooge's favorite, that roast goose. Instead we're having hot beef sandwiches and whatever goes with it.
We like to eat. Blame it on our solid, farming country background, but we can chow down with the best of them. So I figure I better have something out as soon as they arrive. Among the items are these two, favorites of my mother who always had plenty on hand for snackers.
They're also the sort of appetizer that Betsey Jones' Aunt Daphne serves in "Firecracker Queen," a fun romance set in a small Michigan town. I hope your family likes them too!
2 8-oz .pkg. cream cheese
1 Tbsp. seasoned salt
2 c. chopped pecans
1 small can crushed pineapple, drained
1/4 c. green pepper, finely chopped
2 Tbsp. onion, finely chopped
Soften cream cheese. Stir in 1 cup chopped pecans and all remaining ingredients. Chill well. Form into ball and roll in remaining cup of chopped pecans. Garish with maraschino cherry. Wrap well in foil and refrigerate. Serve with crackers or celery sticks.
2 pkg. dried beef
1 tsp. Miracle Whip
1 8-oz. pkg. cream cheese
Sliced olives to taste
Diced onions to taste
Mix all, form all and refrigerate. Serve with crackers or bread sticks.
